A surprising and lesser known fact about this unassuming leafy vegetable is that it actually contains more vitamin C than an orange!   That is just one beneficial reason why health-conscious men and women the world round have made the cabbage a welcome staple in their home kitchens.  Here are but a few more:

Alzheimer’s Disease Some studies have shown that the powerful anti-oxidants in red cabbage reduce oxidative stress in neuronal brain cells and can consequently slow down or even counter the onset of Alzheimer’s disease

Brain & Nervous System Cabbage is rich in iodine which is extremely helpful in healthy, normal functioning of the brain and nervous system

Cancer Prevention Cabbage is a terrific source of glucosinolates which convert into ally-isothiocyanates in the body and have absolutely remarkable preventative properties for bladder, colon and prostate cancers in particular.  The cabbage’s ability to speed up estrogen production is said to be a healthy combatant against breast cancer.  Also, some of the phytochemicals found in cabbage have amazing antioxidant abilities that may protect cells against damage caused by those pesky free radicals

Heart Health Certain types of this leafy green, namely Savoy and bok choy, are laden with beta-carotene, a powerful anti-oxidant that can stave off heart disease.  Cabbage is fiber-rich, as well, and fiber can assist in secreting harmful acids in the digestive tract and lowering cholesterol levels.  Cabbage may also improve overall blood flow

Immune System Cabbage is a natural-born immune booster because of its abundance of vitamin C.  It can do wonders to fight off bacteria, coughs, colds and other viruses.  It is also an easy and affordable way to detoxify your body

Osteoporosis The high amount of calcium in cabbage is important for overall bone health and may even slow down osteoporosis

Enjoy it raw or give it a quick steam or flash-sauté so as not blanch out all those invaluable nutrients

 Shred it into your favorite lunchtime salad for some added crunch or make a tangy and tasty thai style coleslaw or spicy, pickly Korean kimchi to sideline your mainstage protein of choice

I love to shred it and serve with anchovy, preserved lemon, flat leaf parsley and olive oil dressing
