Green beans are an excellent source of protein, complex carbohydrates and fibre. As with all beans they are a good source of B6, folic acid and molybdenum (The mineral plays a role in the biological processes of the nervous system, water processing in the kidneys and energy production in cells) they contain a good iron content  other minerals include magnesium, phosphorus manganese, and potassium.

Wellness

Hypoglycemia the high protein content helps regulate blood sugar levels.

Heart Health because it lowers an amino acid called homocysteine, which is known to be high in people with heart problems due to Folic Acid and Vitamin B6.

Cholesterol triglycerides in particular, levels can be reduced as they are low in fat and high in fibre

Aids Digestion from there high fibre content.

Weightloss

Low Calories assisting calorie controlled diets.

High Fibre helps food to move through the body quickly and taking some of the bad fats in the body with it.

Beauty

Anti Ageing green foods including these beans assist the production of sebum, the skins own oil, helping the skin stay moisturised and protected against ageing elements.

Healthy Hair green beans are also a good source of biotin, which in cases of a deficiency could cause brittle hair. Protein, iron, and zinc are all found in legumes and promote all the nutrients necessary for excellent hair health.

Cooking

When they are super fresh I love them put through a bean stringer and mixed with other salad greens, black sesame seeds & roast red peppers.

Steamed and tossed with toasted sunflower seeds, almonds, chai seeds and a little butter.

As a high protein alternative to carbohydrate rich accompaniments with curries and bowl food.

Soupe au Pistou resembles a summer soup that includes white beans, green beans, tomatoes, summer squash, potatoes, and spaghetti topped with blended garlic, olive oil and basil.

Traditional Nicoise salad with blanched and refreshed green beans, Spanish onion, eggs, olives and  tuna or other gorgeous seafood .

Or as a sensational lunch dish of sauteed green beans, chopped egg, lemon zest, garlic, Parmesan, olive oil and pearl barley.

Steam and serve with crumbled feta & linseed’s.

Grill on the BBQ and served with a lemon, grain mustard dressing and serve with your favourite steak.
